ONE BOWL, THREE DINNERS
One bowl, three dinners.. ‘
Okay so I’m behind, so very behind on my blog posts.. And I’m feeling bad about that so I wanted to share just a little bit of what I’ve been cooking. Simple weeknight dinners, that literally take next to no time, and hardly any washing up.. One pan?! Perfect.
I also love this bowl, makes everything look so pwwetty..
I have another blog post in the pipeline, with a recipe.. Yay! So I’m hoping to keep your mouths watering with a little teaser. These are three very easy throw whatever veg you have to hand in a pan kinda meals. Brought together with a little tomato paste, cooked down fresh tomatoes, and brought to life by the wonder that is fresh delicious vegetables, the magic of herbs, lovely oils, vinegar. All three meal are vegan friendly and all super tasty. I haven’t become vegan, just trying to be more conscious. I really do feel I don’t need to eat animal protein, and I know not everyones the same, I’m not suggesting giving things up just have an awareness of where your food is coming from. There is protein and goodness hidden in all these vegetables, grains, legumes, nuts and seeds, a healthy wholesome balanced diet is what it’s all about!
Here we have spaghetti courgetti, fennel coloured in the pan then cooked with coconut oil, onions, garlic, fresh tomatoes, oregano , (my of my favourite herbs!), red wine vinegar and finished with olive oil. Then I topped it with radicchio, sherry vinegar dressing and nutritional yeast, which has become my new parmesan, it sounds and looks weird but tastes great. Yum!
Second, is a Moroccan dish, Zallouk with brown rice, which isn’t quite as quick, but is by no means difficult! Burnt aubergines slow cooked with with tomatoes lots of spices including cinnamon so a very tasty treat.
Then more aubergine, more tomatoes, fennel, radicchio, rocket, seeds, Indian green chilies. Yum!
